Harvest:
The grapes are hand-picked from selected vineyards and carefully transported in small crates.
Vinification:
Blanc de Noir vinification. After destemming, only the free-run must is collected to avoid coloration of the juice. Fermentation with selected yeasts at strictly controlled low temperatures.
